I own an MM8108-EKH05 V2 development board, I have noticed that the HaLow module has usb connection pads next to it, I have soldered a usb connector into it but unfortunately the module doesn’t come up in system as a usb device. The Whole devkit board is powered via usb and the stlink programmer can be seen as On (based on the green led shining on it) also during power on the status leds blink in quick succession. Is there a possibility to connect directly to MM8108-MF15457 via usb like I have described?

This is not a use case that we recommend, support, or warrant. There is the RD09 providing USB access to the chip included with the EKH19 and there should be more to come, e.g. Vantron have a request a quote button on their VT-USB-AH-8108.
That out of the way, I suspect the issue you’re likely hitting is that the MCU is communicating with the MM8108 so it isn’t entering USB mode. If you where to say assert the STLink → STM32 NRST line or remove power from the MCU, the results may be different. Reset would probably be the safest route for your hardware, not that I am recommending anything, nor have we tried this ourselves 
I also recommend the Vantron 8108 if you want USB form factor. I’ve got 2 and they are great.
